The Thais are famously friendly and laid-back. Probably the only way to upset them relates to their religion or the royal family.

Ladies, do not get physically close to monks. They are not allowed to touch women and doing so would be the single biggest breach of etiquette possible.
The soles of the feet are regarded as being unclean and it is very impolite to point them towards someone. This is particularly the case if you are in a temple.
Thailand has some of the strictest laws in the world against making derogatory comments against the royal family. It is probably wise to avoid making any comments whatsoever.
